Recipe - Gazpacho Soup

Serves - 2 | Prepare - 15 mins + chilling time | Level - Beginner

What you’ll need

  • 1/2 a cucumber, peeled and chopped

  • 1/2 a red pepper, deseeded and chopped

  • 1/2 a green pepper, deseeded and chopped

  • 500g ripe tomatoes (plum if possible), cored and chopped

  • 1 spring onion, trimmed and finely chopped

  • 1 clove of garlic, peeled and crushed

  • 50g of stale crusty white bread, chopped

  • 2 tbsp sherry or red wine vinegar

  • 2 tbsp good quality EVO (extra virgin olive oil)

  • Sourdough or a good crusty bread to serve

Method

Step 1

Place the cucumber, peppers, tomatoes, garlic and spring onion into a large bowl. Add the bread and season with salt and pepper. Add the vinegar and 2tbsp of oil.

Step 2

Mix the ingredients together and squeeze out the juices. Cover and chill for at least 30 minutes in the fridge

Step 3

Once chilled put all the ingredients into a blender and whiz until smooth, check the consistency, if it's too thick add a little water. Taste and adjust seasoning. Cover and chill again until you're ready to serve.
