Recipe - Courgette, Prawn and Tomato Penne

What you’ll need

  • 250g raw king prawns

  • 200g cherry or baby plum tomatoes halved

  • 1 medium courgette diced

  • 1/4 tsp of dried chilli flakes/or half a fresh chilli diced

  • 1 glove of garlic

  • 2 tbsp of oil olive

  • 1/2 a small glass of white wine

  • Salt and pepper to taste

Method

Step 1

Bring a large pot of salted water to a boil. Add the Penne and cook according to package directions, until al dente

Step 2

In a saucepan, heat the olive oil, add the garlic and chilli fry for 1 minute, then add the courgettes and gentle fry for 3-4 minutes until softened.

Step 3

Add the cherry tomatoes allow them to soften, then add the raw prawns and cook until they turn pink 2-3 minutes.

Step 4

Add the wine and allow it to evaporate, season with salt and pepper

Step 5

Take cupful of the pasta water and keep aside, drain the cooked pasta and add to the sauce.

Step 6

Add some of the pasta water to the sauce. Allow the pasta and sauce to cook for a further 2-3 minutes to absorb the water and combine the flavours. Then serve.
