Recipe - Tonno e Fagioli (tuna and bean salad)

What you’ll need
1 Tin cannellini beans rinsed and drained
1 Tin tuna in oil
1 Red onion finely sliced
1 tbsp fresh parsley chopped
Vinegar (not balsamic)
1 tsp of sugar
2 tbsp extra virgin olive oil
A lemon - 1/2 and juiced
salt and pepper to taste
Method
Step 1
Place your finely sliced onions in a bowl, cover with vinegar, add 1 tsp of sugar and a little water. Allow the onions to soak in the liquid for 10 mins.
Step 2
In a bowl, mix the rinsed and drained Cannellini beans, the tuna (adding 1 tbsp of the oil from the tin), the lemon juice, the chopped parsley. Season with salt and pepper to taste.
Step 3
Once the onions are ready (they turn a bright purple colour) add them to the tuna and beans along with another 2 tbsp of Olive oil, mix everything together. I like to serve mine with a sliced tomato and some crusty bread to mop up the dressing.
