Recipe - Ricotta Amaretti Cheese Cake

Serves - 8-10 | Prepare - 60 mins | Level - Beginner

What you’ll need

  • 500g Ricotta cheese

  • 3 eggs

  • 100g ground almonds

  • 150g caster sugar

  • 60g Amaretti biscuits crushed

  • 1 lemon

  • 2 tbsp Amaretto liqueur (optional)

Method

Step 1

Heat your oven to 180c/160c fan. Grease and line a 20cm baking tin with baking parchment.

Step 2

In a bowl mix together the ricotta cheese, sugar, ground almonds. Beat the 3 eggs and add to the cheese mixture.

Step 3

Crush the Amaretto biscuits, zest the lemon and add to the cheese mixture. Mix together until well combined.

Step 4

Pour the mixture into the greased baking tin, bake in the oven for around 50-60 minutes, until the top is golden brown and the middle still has a little bit of wobble.

Step 5

Allow to cool in the tin, transfer to a serving plate. Slice and serve (8-10 slices)
