Recipe - Chicken Involtini

Serves - 4 | Prepare - 15 mins | Cook - 15 mins | Level - Intermediate

What you’ll need

  • 2 Chicken breasts - flattened

  • 1 garlic glove crushed

  • 1 handful of parsley finely chopped

  • 50g Parmesan grated

  • 30g breadcrumbs

  • salt

  • pepper

  • olive oil

Method

Step 1

Heat oven at 180c (fan). Butterfly and flatten your chicken breasts. Watch my ‘how to butterfly chicken’ video

Step 2

Place flatten chicken on a board and season with salt, pepper. Add the grated garlic, cheese, parsley and a drizzle of olive oil

Step 3

Roll the filled chicken into shape. Sprinkle over the breadcrumbs and coat well.

Transfer the chicken onto a parchment covered baking tray.

Step 4

Drizzle with more oil and bake in the oven for 12-15 minutes.

You can easily switch out the filling for others ingredients, mozzarella and sundried tomatoes, pesto, olives and pine nuts.
